Position Summary: Lead Expeditor

I. Pre-Shift Duties (Before Service)

Station Setup: Ensure the expo station, also known as "the pass," is clean and organized. This includes wiping down surfaces and ensuring all necessary tools (e.g., ticket rails, sharpies, pens) are readily available.

Line Check: Verify that all kitchen stations have completed their mise en place (prep work) and that all menu items are available. Alert the front of house and management to any items that are unavailable or "86'd."

II. During Service Duties

Communication: Act as the single point of communication between the kitchen and servers. No one other than the expo should be communicating with the line cooks to prevent chaos.

Ticket Management:

As tickets print, organize them on the rail or screen.

Call out each new order to the appropriate kitchen stations (e.g., "Fire one steak, medium-rare, one salmon").

Manage the pace of the kitchen by timing when to "fire" different dishes to ensure all items for a single table are ready at the same time.

Quality Control: Inspect every dish before it leaves the pass. The expo is responsible for checking for:

Correctness of the order (e.g., correct protein, doneness, side dishes).

Proper plating, including garnishes and presentation.

Appropriate temperature of the food.

Special Requests: Pay close attention to any modifications or special requests on tickets, such as allergies or dietary restrictions, and communicate them clearly to the kitchen staff.

Problem-Solving: Proactively identify and address potential issues. For example, if a dish is running behind, inform the server so they can update the guest.

III. Post-Shift Duties (After Service)

Cleanliness: Clean and sanitize the expo station, including the pass, ticket rail, and any tools used during the shift.

Inventory/Prep Notes/Ordering: Provide a list of any items that ran out or are low for the next shift's prep team. Fill out the order form and place order into Sysco and any other purveyor as needed.

Review: Communicate with management about any issues or successes from the shift to improve future service.
